  • 4 hard-boiled eggs
  • 6 fresh, good quality sausages
  • 2 tablespoons of wheat flour
  • 1 beaten egg

1- The first thing, cook the eggs until they are hard.

2- Remove the shell from the eggs and reserve them.

3- Remove the skin from the sausages and crumble the meat in a bowl.

4- In a plate, mix the parsley with the flour, salt and pepper.

5- Add this mixture to the meat of the sausages and stir until they are well combined.

6- On a working base, spread a little flour.

7- Spread a portion of the sausage meat on the base and form a small hamburger as thin as you can.

8- Put a whole cooked egg in the middle of the hamburger and wrap it with all the dough, forming a bun with the help of your hands, pressing slightly to give it shape.

9- Repeat these steps with all the eggs.

10- In a frying pan, put plenty of oil to heat.

11- Pass each Scotch egg through the beaten egg and then through the breadcrumbs, and put them to fry, when the oil is very hot, until it begins to have a golden appearance.

12- Take the eggs out of the pan and put them on kitchen paper so that the oil is absorbed.

13- Serve the Scottish eggs with green salad or potatoes.
